Lemon Salt
Lemon and chicken flavors work well together. I try to pick up a couple of lemons whenever I grocery shop because they’re such a versatile fruit. There is no better scent in a kitchen than that of freshly grated lemon zest.
LEMON SALT
zest from 3 lemons
1 tsp. salt
1 Tbsp. chopped fresh parsley
CITRUS CHICKEN
3 lb. chicken (any combination of bone-in chicken pieces)
1 Tbsp. olive oil
¼ tsp. black pepper
3 lemons, quartered
1. Preheat oven to 350 degrees.
2. Prepare the lemon salt by combining all three ingredients. Set aside.
3. In a large baking dish greased with cooking spray, add chicken. Drizzle with olive oil and sprinkle with black pepper.
4. Place lemon wedges around the chicken.
5. Sprinkle lemon salt over the chicken.
6. Bake for one hour at 350 degrees.
7. Increase heat to 400 degrees and bake for an additional 10 minutes.
